Many years ago I was most privileged to hear Handel's The Messiah performed in the old Mission Espiritu Santo building in the Goliad State Park at Christmas time. I can still hear, and feel, the choir's voices reverberating off the thick stone walls. I don't know if they still do that, but if so, add it to your bucket list. I checked the web and it WAS performed in 2018 by the Beeville Community Chorus. Hopefully they will continue to do it.
